Absolutely critical.
Here in New England I wire wheel the sliding parts of the calipers and put on anti-seize to help them keep moving well. It makes a huge difference and I rarely have rust on the brakes issues. If I'm doing rotors I also wire wheel the hub and put a skim of anti-seize or grease on it, too. The result is no rust and everything comes apart easily next time around.
One of the reasons I like to DIY this kind of thing is that many shops will knock off the rust but not use any grease, so in a few months the mess starts all over again.
