Rest assure that new sludge is not created that fast but all depending on what your engine looked like before and how much dirt was scooped out and how long the engine had been running with marginal oil pressure up until then, you might have multiple problems.
It could be that messing around in there dislodged a lot of particles further up and they have found their way down to plug up the screen again if the shop didn't enlarge the holes in the screen to allow particles to pass through to the filter.
It could also be that the engine was running to long with bad oil pressure an all bearings are now worn to the point where oil pump have a hard time keeping the pressure up when engine is hot.
The first place to start is to check oil pressure with a gauge and see what the actual pressure is and then go form there either removing the oil pressure valve and later dropping the oil pan again or changing out the oil pump and hope for the best.
