It sounds like the mechanic is trying to convince you to get another car, and not a Saab, so he doesn't have to work on it for you. I tell people silly things all the time. To get them off my back.
Short answer is junkyards exist for a reason and so parts will be available for this car for quite some time. But in 10 years the car will be 25 years old, so you would have to be sort of in love with it to keep it at that point anyway.
