Has the thermostat ever been replaced? It's 6-7 years old now if not replaced so a new one is a good idea (and the long time to warm up from cold - 15 minutes - suggest it is due).
Has the clutch been replaced? How many miles since last fitted with a new clutch plate? A clutch plate getting thin would be more likely to overheat in stop-go traffic. This is especially so if you keep creeping along in traffic by riding the clutch rather than having it in or out (driving in stop-go is a pain for this).
Agree with others that clutch and coolant temperature are not related.
