I went to buy a new thermostat yesterday, and was going to get the 180F thermostat, but they were out of stock, so I ended up with the standard 192F one.
I don't really think that your climate has much to do with it (after all - how many times does it even approach 180F or higher!), just that a cooler engine SHOULD perform better and last longer...
