I think the first year of 'Extras' was better than the second; the second season was hit and miss for me. I believe the first season is available on DVD so I recommend you Netflix it.
I've seen a few episodes of '30 Rock' but miss most of them due to a scheduling conflict with Greys and the fact that my wife has told Tivo to place a higher priority on Greys over 30 Rock. The episodes I've seen of '30 Rock' have been pretty good. I used to HATE Alec Baldwin but find him extremely amusing in this show - just his subtle mannerisms crack me up.
I'll throw another show in the mix that I feel is very underrated: 'It's Always Sunny in Philadelphia' on FX. It's probably not for everyone (it's pretty crude and crass) and the first season was much better than the second but still not bad.
Also, if you liked 'Seinfeld' you'll probably enjoy 'Curb your Enthusiasm'. Take George Costanza and put him on HBO. It makes for lots of uncomfortable situations much like 'Extras' and 'The Office'. It's no longer on HBO but available on DVD.
One last one: 'Arrested Development'. It was the best thing on TV for three years but Fox didn't know what to do with it. All three seasons are on DVD and _well_ worth watching. Put it at the top of your Netflix cue right now!
