Water is not the best cleaning agent, especially if you live in an area with hard water and/or are cleaning your daily driver.
All kinds of crud attach itself to you car's finish. Its not just oils but dirt, tree sap, bird and bug poop, paint overspray, industrial fallout of all kinds, etc. Water is not going to remove or dissolve all those things. Plus using plain water invites the car owner to scrub more to remove surface debris since there is no cleaning ability in plain water.
Modern car shampoos are pH balanced, include lubricating agents to prevent swirls (car washing is the #1 cause of swirl marks), include surfactants that break up and dissolve dirt, and even chelating agents which helps the shampoo suds up in hard water. Speaking of suds, they're a great benefit in suspending dirt particles prior to rinsing. The more suds, the better. How much sudsing does one get with plain water?
Water is OK if you're washing your garage queen that rarely gets dirty. But a car that sees regular use should be washed with a quality shampoo to get the car clean without stripping off wax.
