White '97 900S Conv

I have a white with black leather and black top 97 900S convert. I would like to get the paint looking good as well as everything else inside and out.
I read that white has it's own issues to deal with and getting a deep shine may not be possible. The paint is rough and has light oxidation so I took a Mothers clay bar to a section of the hood. It left a slight streaking on it. Then I took a little rubbing compound to the area due to the oxidation and water spots. The paint is smooth and has a nice sparkle to it but it now has an almost grey hue to it.
What is the best way to refresh the paint on the entire car? I will be doing this by hand. I do want to sell it if I can.
I would also like to get the body trim and bumpers looking deep black along with the interior and top.
Is the top of the dash leather or vinyl?
