Carefully check the paint yourself. Remove rings and watch, and then run your hands over the paint. If it feels gritty, the surface should be clay-barred. Next - move the car into bright sunlight, and carefully look for scratches and swirl marks. You'll have to look carefully as the Steel Gray hides these defects pretty effectively.
My recommendation overall - Wash, Clay, Swirl/Scratch removal, Polish, Sealant, and Wax. Find a good detailer by word of mouth (or ask for recommeded ones in your area on Autopia.com - some are miracle workers).
Ask about the products the detailer will use. Detailers using top shelf products will generally produce a better final result - they invest more in their business for a reason. Products like Klasse(cleaners and sealants), Souveran (wax), and Zaino (full line) are typically used by those who provide top results, but there are dozens of products available to the pro.
I just picked up an '03 Aero - Steel Gray, and did a detail this past weekend. My process was: Mr.Clean Auto Wash (does ok, but there are better), Mother's Clay bar, 3M swirl remover, Meguiars Scratch-x on certain spots, Meguairs Deep Crystal polish, and Meguiars NXT. I plan to top with Meguiars gold class wax soon, but the NXT looks and feels great and could be left as is.
All the products I used were obtained locally, and there are better available through other resources, but they cost more.
