I replaced all the skins, front and rear including head rests and door inserts, in my '86 SPG with covers from saabstuff.com . Their covers are made from original SAAB patterns and are a perfect fit. In the photo of my front seats, the new skin on the passenger's seat is a bit wrinkled because I didn't replace the foam cushion - it compresses over the years from use. I suppose if you want to replace or have the cushion rebuilt the wrinkles wouldn't happen but it doesn't bother me - I think it probably takes stress off the stiching. Overall, I'm very happy with the new covers.... if anything, they're better leather and are made better than OEM. There's about a six week wait for delivery. The only problem with partial replacement of the covers would be getting an exact color and texture match. They'll send you a leather sample booklet for you to compare with your covers.
Not exactly an easy job to do but definitely a DIY job.
