I would wait for a minimum of 60 days or so after the new paint was applied to insure that the paint/clearcoat has properly cured. Polish will remove any imperfections in the paint, whereas wax will provide a protective coating to the paint. Keep washing the car until the 60 days is up to insure that you don't get contaminants in the paint prior to waxing it. I would not think that you would need to polish a new paint job, waxing it should be sufficient.
