OK, so they already replaced the head gasket WITHOUT noticing sludge in the engine, and you drove away and 2 days later the engine is bad??????
That doesn't sound like a good shop to begin with.
If it would be that much sludge in the engine, they should have noticed that in all the nooks and crannies on the cylinder head as well, and maybe investigate what the bottom part of engine looked like before slapping a new head gasket on.
Coolant is never good for engine bearings and if they suspected that, they should have done a couple of oil changes after the headgasket was replaced just to wash out as much of it as possible. Or even suggested to drop the oil pan to clean out the sludge.
