Are you renting at the airport or going offsite to rent? Reason I ask is I believe all SFO airport rental locations are corporate owned so their fleets are rather basic and targeted mostly to business travelers. In many cities you can find more interesting cars if you're willing to go off the airport and rent from a franchised location or smaller local outfit.
For example, here in Atlanta a locally owned rental company offers Honda, Toyota, Mitsubishi, and other imports that you rarely see in national rental fleets. Some Enterprise locations will offer something unusual if you're willing to check them out. And of course every big city has a few exotic rental car places offering Corvettes, Boxsters, Hummers, etc. Then there is always Rent A Wreck and Ugly Duckling, both of which can offer you quite a motoring adventure.
I dunno if this is what you had in mind but hopefully it gives you some ideas. Like Randy said, Ford fleets (Hertz and Budget) are gonna offer V6 Mustang convertibles and Chrysler fleets (Thrifty and Dollar) will have Sebring droptops. Those will be your easiest choices from airport locations.
Have fun! I always enjoy the bay area when I'm there. Tons of stuff to see and do (Napa Valley, downtown, Marin County, Pacific Coast Hwy from Half Moon Bay down to Pebble Beach/Carmel area, Yosemite Nat'l Park is 200 miles away...)
