the V twins use 2 cylinders with the cylinders in a V. They are usully larger displacement (my harley is 1540cc's) & do not rev very much compared to other motorcycle engines but have a lot of torque for the HP they develop
There are also the "thumper" motorcycles which are 1 cylinder engines which are used in 650cc & smaller offroad & on/offroad bikes. They are torquey :)
The liter bikes as well as the smaller sportbikes use a conventional 4 cylinder layout which allows the engines to rev to 14K+ however with little torque
there are also the boxer engines that BMW uses. The cylinders fire parallel with the ground (like subaru's) & look kinda weird compared to other engines.
Triumph has some 3 cylinder engines in their bikes. It is suppose to give them more torque then the 4's but rev more then the twins
