I would say steer slightly to the rear of the animal. I kind of use the principle of how to avoid a spinning racecar on the track: if a car spins in front of you, the best way to avoid it is to aim straight for where it starts spinning, because it won't be there when you get there! I have found slowing as much as possible to help; I've even had deer stop in the middle of the road in front of me. Sometimes they will pull a Kamikaze, like in Leo's case. They are quite agile and their movements can be unpredictable. I haven't encountered a moose, fortunately, but I would definitely try to aim for just behind the hindquarters of one of those - it's the lightest part of the animal, and they move so slowly that they are unlikely to go backwards. I don't like swerving, because that runs a real risk of a roll, or hitting something off the road. But, I know sometimes you just have to react and not really think.
