If all of your LD material is full motion (e.g., movies), then you can do it. If your LD material is a bunch of individual frames of info (e.g. archival still photos), then I don't know.
The way I do it is to run the composite video and analog audio out of the LD player and into the line level inputs on a DV camera. The DV cam encodes it and sends to the Mac via Firewire. Then I can massage it in iMovieHD and burn it to DVD using iDVD.
The DVD product will not be the DVD quality to which you are accustomed! The LD image is inferior to DVD, and the codec in the DV cam is not the best. But it's still better than VHS.
