In a sense yes your correct [but technically when people talk about a computer's "address" they are generally referring to the primary network address for a computer on a network]. 127.0.0.1 is also known by the name localhost and is the computer loopback address. It basically simulates the function of a network inteface internally on the that computer so network methods work (and work efficiently) with local/internal processes. Unlike other network addresses there is no hardware interface associated.
When your connected to your ISP you will notice your computer has another IP address associated with that connection. Same deal if you have a network card and are connected to a lan.
I can't be much help with the rest. However, when you dial up and connect with your ISP do the pop3 addresses change or stay as 127.0.0.1? I see a lot of references to changing this to 127.0.0.1 so that it gets passed off to spam filters and other software before sending. So maybe this is OK and it doesn't work b/c the configuration is wrong with some other software some place. I saw a reference to Macaffee making this happen automatically like you say but now answer.
