Too much current going through the GFCI will not cause it to trip. Current overload protection is the job of the circuit breaker or fuse.
The GFCI senses current flow and will trip at a non fatal current differential of about 5mA. Current going out the "hot" wire must equal the current coming back though the "neutral" wire. There will be a voltage drop as a result of the work being done, but current in = current out. The GFCI will sense a current unbalance and trip. It will provide protection even in the absence of a ground wire.
GFCI's are required around wet locations and outdoors. On new installations you will find them around kitchen sinks & wet bars, bathrooms, in the garage, and outdoors.
If a GFCI is not required where a major applicance is plugged in, it would be because one is not required in that location.
If a refrigerator is causing a GFCI to trip, there is a current leak somewhere, or the GFCI could be going bad.
