Possible reasons, without attacking the people who choose to own the cars:
1. I think that certain cars encourage certain kinds of driving. I know I'm more likely to agressively hotrod our 9-3 HOT stick than I am our 9-5 Linear auto because the 3 seems to WANT to be hotrodded. Maybe the Prius, with its slow acceleration and shiftless transmission, has the opposite effect, lulling the drivers into complacency.
2. I suspect, both from my own experience and from many others I have talked to, that manufacturers seem to intentionally over state the speed that high mpg cars are going. Our old Civic, for example, was about 6mph off and, when I complained to the service center, was told they were all that way. Think about it: if you're really going 64 when you think you're going 70, your mpg will definitely be higher.
3. Noise. Ever driven a Prius? No engine noise to speak of; no familiar revving sound as it runs through the gears. Without the aural feedback, you lose one whole aspect to the driving experience.
