Something is very amiss - was this a real Apple Store, or just a place selling Macs?
Depending on the model, the iMac comes with an Airport card. However, some were sold without them (stripped down models). But it's all the same machine - they all have space for the card and card cage.
The 'original' iMac G5 (non-iSight) came without a card, but it could be added as an option when bought. The later (iSight) comes with the card standard.
Now, if the shop says they don't know how to install it, I'd take them at their word. That doesn't mean it can't be done, it just means they can't do it. That is refreshing, and better than some guy with three sizes of hammer trying to make it work.
My first suggestion would be to find an Apple Store, or a Mac shop that can install the Airport card. It works really, really well, especially with the built-in antenna. And it's pretty cheap ($50 at comp USA)
Go to the Apple support website, and under support, look for Do It Yourself and airport card. There is a very nice, step-by-step with pictures pdf file on how to install the card. I'd post the link, but it appears to be getting caught in the Spam filter.
It shows how to open the case and peek in and see where to install it. Opening the case is VERY easy.
OK, that doesn't answer your question. Can you use a USB one? Yes. However, how far from the server will you be? USB wireless devices tend to have very small antennas, so the range is compromised. If the iMac will be in the same room as the server, just run an ethernet cable.
