Hey Finch,
Not an Apple or iPod expert, but I think you have a couple things that could be going on. I see you put down an 80GB classic iPod, but this was the case with the 4G Photo, Nano, and 5G I have worked with (on Windoze). (Sorry, not in front of my machine - at work - so I don't have iTunes to look at)
1. When you say display, how do you mean? Just on the screen, or when you click on the middle button, to scroll through (song, fast forward/rewind, rating, and album art), the album art does not appear? And as mentioned, I think there is a spot under settings where you check off syncing the artwork, much like choosing to synch playlists, podcasts, photos, etc.
2. This one should work, but perhaps try it on a spare machine, or backup your iTunes music library first. But navigate to whatever "drive" the iPod appears under My Computer (if using Windows). Once you are there, you will see the folders that list the music, contacts, photos, etc. If you have view hidden folders turned on, under explorer, you should have a "Control" folder. This is where all of your music is stored on the iPod. Now the naming convention is wierd, I think 3 letters or something, but if you go into the folders, and drag and drop to iTunes, it should add the songs to your iTunes library. Just turn on the "sync to itunes music folder location," and it should recreate the files, and maintain tagging information. I have used this in the past.
As always, your mileage may vary, as I am going from memory, without iTunes or my iPod in front of me.
