OT: a question about rings

Engagement rings that is. It feels so inappropriate to post about this here, but it is the most knowledgeable anonymous place I can think of.
So my GF's mother gave me the family heirloom ring in preparation for the big event. The ring is 100 years old, but the setting is in very good shape; the current ring/setting is just too big for her. My two questions are: 1. Do jewelers ever have pre made settings that they could set a diamond into? 2. Would it be possible to save the old setting and have a new stone (not a diamond) set?
Due to logistics the timeline is only a couple weeks long before I would like to have the ring ready.
BTW, her mom fully expects me to place the diamond into a new ring; I would just like to find a good use for the old ring.
