I did our countertops in Richlite. It is a solid surface but not plastic like Corian, and extremely robust (and repairable). Material cost is comparable to other solid materials (granite, Corian) but easier to manage. This is a high end (eco-friendly) architectural material, but may not be to everyone's taste. There are several competing brands if you google, though Richlite was the first. You can machine it yourself using good quality carbide saw blades + router bits. Because it's solid, you can do almost anything (drain grooves, strange cutouts, undermount sinks). It has good structural strength, so you can cantilever it as well. Cuts similar to a very heavy hardwood. Glue sections together with epoxy (using dust as tint/filler). Finish carpentry is a fussy high skill job - any blemishes will stick out like a sore thumb. If you have the time, tools, and knowhow, go for it! One warning is you will want a helper - this stuff is heavy! you will not be able to lift a 5x12' 1" sheet, even with 2 people!
Cheapest solution though is DIY formica. don't use undermount sink with formica + keep seams clear of water. but it won't last like Richlite... that stuff is indestructible, and where I did the install myself, it cost less than half the price of granite.
