The best chili I've made was based on a recipe from the Cook's Illustrated Best Recipe cook book. It's a beef chili (no beans... although you can add them) and includes chunks of sirloin and lots of ground chilies. It can be made hot or mild. I like you use chipotle peppers when I make it stove-top... but the best flavor comes when making it in a Lodge Dutch oven over an open fire using hardwood coals or charcoal briquettes.
It becomes lightly infused with smoke and there's nothing like opening the Dutch oven after it's been simmering for a couple hours. You first blow or sweep off the ashes and then carefully lift the lid and *wham* the aroma strikes you.
Some crusty bread, shredded cheese and a hearty beer and a cool fall day is complete!
