Canon and Nikon are both good cams, and to some extent it's how they feel to use. Try both in a store to see what feels right in terms of where the controls are, how they work, what you like and don't like.
I have a older Nikon DSLR and recently used a fairly high-end Canon for about half an hour on a fashion shoot a Canon photo conference. Both are fine and I think Canon has an edge these days, but for amateur work it probably doesn't matter a whole lot in reality. I find I don't use all the controls and features, but wish I had a better lens.
All up, all in, the lens is the big thing. One approach is to get a mid-range Canon or Nikon body and put a higher grade lens.
ALSO...
go to a camera evaluation site like Steve's Digicams and read reviews. They tell you more than you want to know. Then go to B&H Photo to read real world reactions and evals for the models you're interested in. I get all my photo and video gear from B&H (excellent pricing) and they have never steered me wrong. Great service, too.
As for output, this is dependent on the cam (10MP is plenty for mos uses) and the printing device. Top level desktop size inkjet printers (HP or Epson) use up to 8 colors and do a fine job. But you still may have to play with an image in Photoshop for the best results. Good paper, matched to the printer, matters too.
