no need to tip taxi services, just round the fare up a bit to the dollar (Hong Kong dollar). Tolls and tunnels are extras as well as night fares, and they will total that up accordingly.

For restaurants, they have a built-in 10% service charge in almost all places you would visit, you can tip an extra few percents if you feel like but not always necessary. If in doubt, ask whether they have included the 10% charge, most places would show that in the bill (LOOK carefully). Unless you speak Cantonese and go to one of those hole-in-the-wall places where they don't charge the 10% service charge then in that case, leave a tip.

Unless you can pay using a credit card without foreign transaction fees, use HKD, change some money at airport for taxi fare and change at ANY BANK (not money changers) later, just walk in any bank with your USD. DON'T change money at ANY HOTEL.
