....and they trust that you are honest, just bring up the issue. You will know in an instant what the outcome is.
I have had some of both outcomes. Once I had a classic car worked on by a local who did a great job mechanically but when I was working on the car a few days later, I noticed that they had damaged the custom paint above the right front wheel well and touched it up with 'something close'. It was close enough that I did not notice when I picked up the car, thus it was too late to even try to go back days later when I noticed. They know they did it (or the mechanic does) and I never went back.
Recently an indie was working on my 9-3 and snared the cruise control cable in the valve cover, making cruise not to work. I did not notice it for days, as I don't use cruise much. Called the indie and he said he would buy a new cable if, when I released it and tried cruise, it didn't work right. As it turns out, all was well when I freed the cable and re-torqued the valve cover, so no worries. His willingness to make it right makes him my go-to indie.
I guess the best way is to approach them and see what they say.
