I don't know what insurance company you have. My brother was t-boned in my father's aluminum chassis audi a few years back. The other driver was clearly at fault. The other driver's insurance company started giving my father the runaround - wouldn't give him claim number, stopped picking up the phone, etc. My father called up his insurance company (state farm) and filed a claim with them. His car was repaired under that claim while state farm took the other insurance company to court.
I don't know who your insurer is but that is certainly a viable option. More importantly, I think a casual suggestion of that option to this (apparently self bonded) trucking company will give you a little leverage in your negotiation.
As far as getting your car back, I would suggest letting it go. I know you loved what it was but it will never drive the same again.
