First question...why would you want to heat hot water???

You don't say if you have a gas or electric water heater now, that could make a difference, but I have one customer who has installed a Rheem RTE 13 electric model in their summer cottage. It is a one bath unit and the Rheem does extremely well for them.
I have another customer looking to install one in a two bath unit and the plumber and I are looking into more powerful units like the RTE 18 which has a 5 gpm flow.
You do need (for electric) to have correct sized service to the unit, so you may have to upgrade electric depending on what you currently have in place and the location. But the space savings can be worth it if storage is at a premium. The Rheem RTE 13 my customer has is about 12" square and 5" deep, pretty amazing for what it produces.
If you do decide to go tankless, make sure the flow can keep up with your REAL demand, don't think you will change your lifestyle to match the unit. They are not great for bathtubs, for example, if not sized correctly. And a low flow shower head is essential if you go with a smaller unit than optimal.
As for 'copper pipe', most require non-PEX for about 12" on either side of the unit for rigidity but that is all.
