Simultaneous launch and recovery is made possible by the angled deck, not catapults. It's also a major safety feature (if an incoming plane misses the arresting gear, it can take off again without other aircraft in the way). Steam catapults were introduced when jets needed higher take off speeds than could be accomplished on a carrier deck. Right now, they do about 0-150mph in 2-2.5 seconds. Definitely something that gets your attention.
Side mounted elevators, I believe, predate the angled deck. In any event, an angled deck really isn't needed for the elevators (you can just tack them on to the side of the ship.
Interesting little factoid: the steam catapult, angled deck, and Frenel-light landing system (I forget the name) were all British inventions, adopted by the U.S.
