Don't get a convertable type. Get a proper forward facing, then a proper booster when the time comes. The convertable types just don't restrain smaller tots too well (the seats are a compromise). Also, with child seats there's a good correlation between price and quality. Graco and Britax make good infant seats, and I'd assume the forward facing ones are good, too.
The LATCH system is a plus, but I'm not sure if you can mount the seat in the center of the back seat (there's usually only enough room in the back seat for two LATCH positions). I think child seats are just now coming out equipped with the LATCH system. Tethers also are a big help. Also make sure that there are no sharp edges or nooks that can catch little fingers, and that the restraints can be adjusted well. A 4- or 5-point harness is the only thing to consider, not those big padded T's that don't really strap the kid in. And make sure the lap belt sits on the hips, not the abdomen (adjust the lap belts first, then shoulder belts, so that the lap belts aren't pulled up onto the abdomen).
