I, too, found no official definition of the word, but couldn't access the OED, which would be my definitive source.
I think your professor means to use the word "grammarian."
Whether or not a word is "real" underscores the beauty of language: it is a fluid, constantly evolving and growing beast. Google returned 74 pages with the word "grammatician," including several academic pages, so the fact that no one has "officially" defined it somewhere doesn't preclude its actual existence and, in fact, in my opinion anyway, the webpage hits confirm it. The same holds true for the meaning of words. For example, the word "ultimate" has, until recently, meant "final." It is now accepted to also - and probably more commonly - mean "best."
