Well I don't have 3, but have 2, both at work and at home. By the way, I'm assuming you're talking PC's running Windows here!
Basically you've got 2 options: first is use as many video cards as you have monitors. Second, to save expansion slots, is to use "dualhead" cards that will support 2 monitors each.
Assuming you have the right OS (Win98, ME, 2000, or XP pro), single-monitor cards are pretty simple. Just plug 'em in (typically one AGP card plus as many PCI as you want), set-up display properties to extend the desktop to the additional monitors, and have a great day. Every now and then, seemingly mostly with ATI cards, you'll have problems if you use more than one of the same model of card. It sounds counterintuitive, but I recommend using cards from different manufacturers, or at least different models.
Dualhead cards are a bit different. They save expansion slots, but there are a few kinks to look out for. The only ones that work well IMHO are the Matrox ones like the G400. When you install a G400 (with the correct drivers), Windows basically thinks you've got 2 video cards, and works right. Other brands (I've had experience with ATI) use driver kluges where Windows thinks you've only got one monitor that's really wide, and you're limited with the resolutions/refresh rates you can set on some of the monitors. Personally I can't stand that kind of setup, but "your mileage may vary"!
