These 2.2 and 2.5 Subarus are prone to head gasket leaks that can be hard to detect and verify. I am not saying you do have a head gasket leak, but you may. They can be intermittent and undetectable by ordinary testing processes and very hard to nail. If you have a known-full system with no external leakage on pressure test that loses coolant, in many cases only after prolonged driving at highway speeds, you probably have a slight head gasket leak. Cracked heads are also possible, as are cracked blocks only on 2.5.
There is probably a bleed screw at radiator R (passenger side) that must be opened to fill the system fully. It is plastic with a cross- or phillips-slot.
The best way to know if a system has unbled air is to use a pressure tester. On these cars a full system will pressurize to 15-20PSI with 5-10 strokes with my Stant pressure tester. More strokes of the pump mean air in the system, you need to run the car to operating temp, watch the gauge closely, let cool a while, top off with the bleed screw open again.
If you have a full system and no coolant loss, your symptoms are most consistent with a plugged radiator first or faulty thermostat second. Use only a Subaru thermostat.
