The previous Escape was pretty good on the highway - I can only guess the new models are even better. The Duratec moves the Escape pretty well - it's not going to be fast, but it'll be fine for hauling people on the highway. That said, I've never rented a four cylinder Escape - they've all been stripper V6s, which is a pretty fine configuration. Based on 1500 miles, I'm guessing you're bringing along some luggage, and I would be concerned about space - the Escape is not a large vehicle. The family and the dog would be fine, but throw in four people's gear for a few days and you probably have a space issue.
