The 5mm valves have to be condiderably lighter than the 7mm valves. Thus the spring force to overcome the inertia and close the valve also needs to be less. Hence for the same rpm limit 5mm valves would need less spring pressure than 7mm valve springs.
Where is the tradeoff? or is there any?
I have not measured the flow rates but I question the validity of the statement that the 7mm stems do not affect flow more than the 5mm stems.
