I have 7" rims with an offset of 42mm, and spacers of 12mm or 13mm, so the effective offset is 29 or 30. The problem with keeping the inside position the same as the wheel gets wider, is that the outside position can actually cause the tire to rub on the wheel arch. It also looks rather odd if the wheel sticks out too far. Once you get past 6.5" wide, you have to somewhat split the difference between where the extra width goes. Tire width makes a difference as well, I don't think you can go wider than 225 whether you have 7" or 7.5" wheels, in which case you'd probably want the same offset with 7.5" as with 7". Mine have a tiny amount of rubbing, so I would suggest not going with more than 27 offset.
