I know how much fun it can be to floor it all the time, and I have barely even scratced the surface of power upgrades. Don't really consider the Jacobs ignition I got much of a power boost, but I am honestly seeing a little bit higher boost and holding that longer. Just a little bit less than I saw when I tweaked (albeit crudely) the APC in my car. I plan to go with a 2.8 bar FPR and upgraded APC here in the next few months hopefully.
At least with a Saab, you're not moving around three tons of weight when you floor it, like your SUV, and a 9000 is more aerodynamic than it looks, so you can probably still get near or even a little over 30 mpg if you set the cruise on the highway.. Any car that can do that, I forgive a little gas gulping around the city when you're on the fun pedal a lot.. :)
Try cruising at 135 mph some time, then see what kind of mileage you get! On a safe empty road, of course, in favorable weather and radar conditions..
Cheers,
Aaron
