You are right about one thing; "as the pressure rises the pump can't keep up". Even when a boost pressure powered regulator is used to bring up pressure, the available pressure will still be limited to the capacity of the stock pump. Aftermarket pumps tend to provide 100 + psi which provides more than adequate supply. Kevin is right, fuel pumps deliver less flow as pressure increases. So, there is a need to have adequate fuel supply on hand when modified systems require more fuel at high pressure. The conclusion here is, even at low flow i.e high pressure conditions, the high pressure pumps will be have the ability to provide enough fuel.
Bosch makes such pumps I'm not sure if they carry one for your car.
