I saw a product somewhere (Eastwood maybe) that you spray onto sound deadening, let it sit and when you come back it scrapes off with ease. It might help with the 30 year old deadening material. FWIW, I read in Grass Root's that they stripped there 2002 rally car bare and used truck beadliner for undercoating on the underside, lighter and more durable.
One question about your removable firewall plate, any concern of something jamming between it and the crank and it blowing off? I rather not describe any scenario's that would jinx thing's for you, but god forbid something had the force to blow through it like a crankshaft spinning at 7000 rpm's (I know it's an off-the-wall idea but there is a point) and the sheet metal was the only thing separating your feet and the motor. Is there any any sence in bracketing a cross brace on the interior side for added protection? Bracketing it so you could remove it if you need. I know space is limited down there and I don't have any rally experiance but FWIW I thought I'd mention it.
