Taking head to machine shop: need advice

Hello all,
I've got a spare '86 9kT with a blown head gasket. I was planning to pull the head this weekend and take it to a machine shop next week simply to check that it isn't warped and machine it flat if necessary. Two questions:
1) What do I need to do to prep the head? I was planning to just pull the cams and the NTC sensor. Does anything else need to be done?
2) I've never been to a machine shop before and am not exactly sure what to ask for. Will any shop be able to check and see if my head is warped, or do I need to look for something special? What is the name of the procedure(s) that I should ask for?
Thanks a lot for any advice!
