I have finally found the solution to my grounding problems...
I had similar crazy readings with my car. If I hit the brakes, the sensor would drop a bar or two, if I turned up the stereo the bar would bounce with the music!
I finally found that the O2 sensor itself was not being fully grounded. I'm not sure why but as soon as I hooked up a small wire from the turbo exhaust stud to the front frame rail, the sensor started reading correctly and nothing seemed to affect the reading like before.
Give that a try and see what happens to your gauge.
