The thermostat on a c900 doesn't really keep the temperature constant. It's just a door that lets the coolant flow to the radiator at a specified temperature. There's still a good amount of temperature fluctuation based upon engine speed, outside temperature, and airflow into the radiator. Therefore, there is a temperature sensor aka Negative Temperature Coefficient? (NTC) that allows the ECU to adjust for engine temperature.
A lot of people have had good results from a thermostat that opens slightly sooner than the stock version. This allows the cooling system to stay slightly ahead of the game instead of playing catch-up. This is especially helpful to people with turbocharged engines who live in warm climates. This can also help out if your cooling system components are old.
In fact, I think there is more than one "stock" thermostat depending upon the market where the car was intended.
