You can learn a lot about cavitation in the usual places, like Wikipedia. Basically it is a phenomenon occurring in pumped liquids where due to extreme pressure differentials within the system, gas bubbles occur within a liquid, then implode resulting in localized shock waves that can erode metal. Do this repeatedly within a cooling system, and you can make holes through cylinder walls, destroy water pumps, & cause all kinds of mischief.
Antifreeze contains additives to reduce cavitation. Maintaining coolant levels at 50% (in most climates) and changing every two years will keep up additive levels.
Water pump impeller design doubtless relates to cavitation problems but I do not know exactly how. If you get a European water pump it is probably well-designed. There is a Japanese replacement on the market, GMB or something like, that is of poor quality in my experience.
