I'm in the same position right now. The easy route is to buy Jack Ashcraft's pre-cut kit, which I believe costs about $300. I'd do that if I had a nicer car, but for now I'm experimenting with budget alternatives.
I've got some stuff to use -- the upholsterer who re-did my door and trunk panels gave me the leftover material, which is a cloth-backed vinyl that looks pretty nice as a headliner. (If you want a perfectly smooth fit like the original, you need to back it with foam, but I'm going to skip that part in the interest of a bit of extra headroom and just stick the vinyl directly to the roof.)
The problem now is what to use to stick it. My first attempt -- fiberglass-backed carpet tape designed for putting outdoor carpeting around swimming pools -- was easy to work with and held to the roof really securely, but it let go of the vinyl when the weather got hot. I guess the next ploy will be contact cement, although I've been stalling because with contact cement you've absolutely got to get the vinyl in the right position the FIRST time.
Incidentally, the way I've been dealing with fitting -- which seems to work pretty well -- is to cut a piece of vinyl considerably larger than what I need, stick it, then trim the edges to the proper size. The weatherstrips hide the cut edges around the doors, and you can press the front edge in under the rubber windshield retainer strip if you've got a putty knife and a lot of patience.
If anybody's got better suggestions or tips, I'd love to hear them too!
