Try Crutchfield (www.crutchfield.com). When you buy a head unit/CD from them, they give you the cables you need to connect to the OEM wiring harness. All you have to do is solder their connector wires to the head unit harness. They also give you any plastic dash mounting kit parts you need. I remember that the last time I bought a steroe for an older Saab from them, the 10 pages of illustrated instructions Crutchfield provided included instructions on bypassing the amp/eq, so that's probably required.
