Your best option for the money is a certified check or money order, or wire
transfer into your bank (or PayPal account). Then you should sign over the
title to the new owner, (even if he is not present), notarized if necessary.
A bill of sale is a nice touch, but it's the title document that carries
legal weight.

I would definitely leave the transport to the new owner -- if you hire the
transport company, then if there is a problem it is his car, but you, as the
transporter's customer, are the one stuck filing and collecting on the claim.
