The service indicator continuosly updates the "oil life" number by subtracting "life remaining" for each startup and each period of operation, weighting the period according to engine temperature (very nearly equal to oil temperature in the 9-3, thanks to the oil to water heat exchanger), load, and outside temperature. It also counts down each day from 365 to zero starting from when the service indicator was last reset. (resetting the service indicator so that it counts down should be part of the PDI, I think.)
You can perform interim oil changes if you like, but if you reset the service indicator when you do, you may never receive your "free" oil changes. Saab reqires the oil life to be close to zero or the aniversary to be reached or they won't pay the dealer for the change. A lot of people perform an intermediate oil change at 50% on the oil life monitor and let the dealer perform the "free" service at 0% (or one year, whichever comes first).
There hasn't been a lot of experience collected on Saab's V-6 Turbo, but the guts of the engine have been in use by Cadillac for several years without there being any known issues.
