Like most cars, they get better as they get newer. '03s certainly had lots of niggling little issues, and there have been a number of software updates over the years. The big changes were in '07 and '08. '07 got a new dash, which fixes a ton of issues in that they got rid of the awful fibre-optic based stereo system and a lot of the risk of the plastic peeling. '08 got the exterior revision, and also got quite a lot of attention to the sound deadeneing. They are noticably quieter. '09 got Bluetooth finally!
Realistically, at this point a well-kept '03 and '04 should be pretty well sorted out. The first owners got to play beta-tester on those, but the warranty should have covered it. '05s and up seem to be generally pretty good. I am on a couple of 9-3SS boards, and from that point they don't really seem to have much in the way of common mechanical issues. Mostly complaints of rattles and squeaks. I'll take rattles over sludge any day.
So in a nutshell, buy the newest you can afford, but a carefully picked early car is likely a fine buy as well.
I have an '08 Sport Combi with ~10K on it, so far a most excellent purchase. I much prefer it to the 9-5 I used to have, much nicer to drive. I'm OK with the slightly smaller interior.
