First a 30g overcharge would probably not effect pressures enough to make a noticable difference. But it is possible that the system is overcharged if the fans are running constantly but the above average temperature could add to the heat of the engine bay.
What might give you a clue if it is overcharged is reading the pressure with the ac off at start up. I can't remember on the V6 if there is a fuse you could pull or something to make sure the compressor does not come on. But with the ac off the temperature in degress fahrenheit should equal the pressure. Something around 5 to 6 bar. If its way overcharged it would read high. It's worth a try.
Even with a good ac shop their scale on the ac machine sometimes gets out of calibration leading to over or undercharging cars. It usually takes a few overcharges before you notice a noisy compressor or a performance issue such as yours. Good Luck, Bernie
